peaches and cream

I love California for many reasons, but I especially love our access to wonderful fruits and vegetables. My favorite has always been nectarines and peaches and right now stores and Farmer’s Markets are loaded with these sweet treats.

I recently attended an event at a friend’s home where she prepared all the appetizers. She had a variety of figs and cheeses, tarts and chocolates, but my favorite dish that night was her home-made Peach Cobbler. She even had wonderful French Vanilla ice cream to top it off. Needless to say, I bypassed the rest and went straight for the cobbler.

I was able to get her recipe and give it a try at home. Easy and delicious is all I have to say.

Peach Cobbler by Diana C.

4-5 c sliced peaches or nectarines (or combo)

1/4 c light brown sugar


1 1/2 c flour

1 1/2 t baking powder

3/4 t salt

1 T sugar

3 3/4 T cold butter, cut into cubes

Scant 3/4 c whole milk

Preheat oven to 425 degrees. Spray deep 9″ dish.

Put fruit into large bowl. Sprinkle brown sugar and 1 T flour and stir gently. Set aside in refrigerator.

In a medium bowl, mix together flour, baking powder, salt and sugar.

Blend in butter to crumbly texture. Add just enough milk to form a moist dough.

Press dough into pie dish and pour the fruit on top. Bake for 40 minutes.

SERVE WARM (and add ice cream to make it especially delicious!)
