Rainy weather and comfort food

I’m not the greatest cook but I do love to piddle around the kitchen on rainy days. Below are two recipes I tweaked on a recent rainy Sunday. Easy to throw together and they make the kitchen smell great. Both are great for soothing the soul on a cloudy day.

Julia Child’s Popovers Recipe
(with Blue Cheese)

Ingredients

1 cup all purpose flour
1 cup whole milk or 2% milk, at room temperature
1/2 tsp salt
3 eggs, at room temperature
2 tablespoons unsalted butter, melted

Preheat oven to 425F.

Mix together all ingredients.

 

 

 

 

 

 

 

Pour batter into individual buttered muffin pans (I used the mini muffin pan) about 3/4 full.

 

 

 

 

 

 

 

 

Place a few chunks of blue cheese in each muffin.

 

 

 

 

 

 

 

 

Bake them in the oven for 25 minutes.
Turn down the oven temperature to 350F for 15-20 minutes.

(If using mini muffin pan, remove after 25 minutes or until golden brown.)

 

Easy Chicken Soup (which is perfect with these mini muffins!)

Ingredients:

One whole chicken (I bought the precooked at the store). Two carrots (peeled and chopped). Two celery stalks (chopped). Two garlic cloves (chopped). 3 or 4 c chicken broth. Noodles (I used bow tie) cooked al dente.

Place all ingredients in cast iron pot. Pour in chicken broth. Cook on low all day and add noodles half way through.

This actually only took a couple of hours and was enjoyed all day!
